Six, made this morning, with butter and crisp onion. Curd from below Bystrzyca, buckwheat from Sobótka.
Half a duck from near Milicz, slow-roasted, red cabbage with apple, dumplings with the dimple. On Sundays it tends to sell out by 3 pm.
A whole pan-fried trout, dill butter, pearl barley with root vegetables. Delivered Tuesdays and Fridays, so the fish is never older than three days.
We opened Kredens in 2018 in a former colonial goods shop on Chrobrego street. We cook what Poland has always eaten — broth, pierogi, duck, potato pancakes — from produce we know by name: trout from Kłodzko, goat’s cheese from below Bystrzyca, flour from the mill in Sobótka.
The menu changes four times a year, the lunch every day. We have no microwave; we do have a bread oven and nine tables where nobody is asked to hurry.
